			The most reliable testing for this is LD50 testing, which Bryan Grieg Fry goes into in depth at his website.  (http://www.kingsnake.com/toxinology)  That is, the amount of venom needed to kill 50% of the test subjects--usually mice, rats or some small bird--50% of the time.  You will see something like "Crotalus adamanteus, Eastern diamondback rattlesnake, 1.65 mg/kg".  There are different methods of testing, which I haven't time to get into now.
