Where can I learn about venom collection as a business, how much demand there would be for it, etc?

Well, you could go to www.latoxan.com, or www.africanreptiles-venom.co.za, and ask the people there. Or you could take my word for it. There's more than enough venom being milked right now. Then there's the equipment needed for purification, protein separation, LCMS to make sure that you are selling the right component to the right person. You will need to guarentee me, your prospective consumer, that your snakes are impeccably healthy and in as bacteria/parasite-free environment and that the product will be bacteria free.
Oh yea, what if you get tagged? What plan do you have for antivenom?
Most operations have a taxonamist--who will likely be able to tell you what locality of what sub-species you are dealing with; an actual keeper who is responsible for the upkeep of the snakes; a vet who is responsible for routine health examinations and ensuring that sick snakes get well and are isolated away from your healthy milking stock; a milk man--the hardest position to fill; Someone who specializes in the afrementioned protein separation, lyophilization LCMS and whatnot.
You will have to milk sometimes better than 100 snakes per day and unless you are doing something that there is a particular demand for--I know that Echis occelatus is currently being saught--or you can fill some niche--say, lots and lots of rear-fanged snakes--you will likely fail at making aprofitable venture out of venom collection.
